There are loads of health and environmental benefits to going vegetarian or vegan, and Colorado offers its residents a variety of eateries and restaurants that create TONS of different vegetarian dishes to satisfy any foodie or restaurant patron. Here are our favorites.

Watercourse Foods

This restaurant, nestled in the corner of 17th and Emerson, boasts a bold and delightful vegetarian menu for breakfast, lunch, and dinner. From vegan breakfast burritos and waffles to Cuban sandwiches and vegan mac n' cheese, Watercourse offers its customers many ways to indulge. If you are looking to round out a tough workout or hike with a more wholesome meal, Watercourse serves up a light, fresh Seaweed Radish Salad as well as a Macro Plate; perfect for getting a strong array of macronutrients. The ambiance is open, well-lit, artsy, and fun! Definitely worth a try that and won't disappoint!

Sister restaurant to Watercourse Foods, City O' City has a similar vegetarian/vegan menu and concept located in the heart of Denver's lovely and hip neighborhood-Capitol Hill. The elaborate light fixtures and local art covering the walls entices any customer as they peruse a menu filled with staples that make their menu distinct. From "Chicken" and Waffles, to the City O' burger, this restaurant has loads of delicious options. Furthermore, City O' serves up Kombucha, vegan matcha lattes, and an array of pizzas, salads, as well as soups. Also, City O', can make many of their dishes gluten free--just ask!

Their motto, "SLO Food Fast," highlights the restaurant's dedication to providing their customer with high-quality food and experience. This restaurant offers almost exclusively vegan and gluten-free options from Sunflower Risotto to an Indian Kitchari. Their menu rotates with the seasons because they source much of their ingredients from local gardens and farms. A must-try is their delicious and freshly-made yucca fries! Vital Roots serves up brunch on the weekends, a plethora of juices, in addition to an assortment of vegan and gluten-free desserts. You can dine in or take to-go. This restaurant, located off Tennyson street in The Highlands is a blissful haven for the healthy living Coloradan.

With several locations throughout the Denver area, Native Foods offers an assortment of healthy-eating options like their wholesome Buddha Bowl and hearty Taco Salad.
